Iberico Jamón de Bellota is a dry cured leg ham from Iberian black pigs raised in the oak forests of Spain. Fed on a diet of acorns (bellota), the ham develops a rich, buttery and nutty flavour with dark crimson meat and delicate white fat that melts at a low temperature.
The pigs roam freely across 30,000 hectares of forest, consuming up to 10kg of acorns for every 1kg of meat. By law, Jamón de Bellota must be aged for a minimum of 36 months, but Blázquez ages their hams for up to 48 months to deepen the flavour and complexity.
Blázquez produces both 100% Iberico and 50% crossbreed Iberico hams. The family favours the 50% crossbreed, which combines Iberian genetics with rosier meat and greater intramuscular fat, creating a balanced flavour and exceptional melt in the mouth texture.
Simply slice and serve. Blázquez is a fifth generation family producer based in Salamanca, Spain, renowned for crafting some of the finest Iberico hams using traditional methods.
